That's right, I said PooPoo cookie! Rather:
Gluten & sugar free almost vegan poo poo cookie.
I've been craving cookies so bad in my wacky week of PMS.. but I can't seem to fit into my pants lately. So I'm coming to a compromise. I picked up a box of Arrowhead Mills Gluten Free All Purpose Baking Mix. On the back it has a recipe for Peanut Butter Cookies. It SAYS to add maple sugar, honey, peanut butter... which just won't do for me. Sugar will make me self loathing, honey grosses me out and peanut butter makes me feel heavy and lethargic. Instead of sugar I used Splenda but not just any Splenda. I put in the fiber enhanced Splenda packets. There must be 30 packets in the mix (at 1 gram of fiber/packet) So this is the new recipe:
1/2 cup Splenda sugar
a splash of honey
1/4 cup of orange juice
1 1/2 cup Arrowhead Mills Gluten Free All Purpose Baking Mix
spices (I used cinnamon, nutmet & cardamon) but you can add anything.
*Preheat the oven to 350 degrees. Next, blend the shit out of everything except the baking mix. I used my bullet blender and it worked just fine. Pour that in a bowl and then dump the baking mix in and stir/mix. I stirred with a wooden spoon and it was fine. Then put the dough onto an ungreeased cookie sheet about 1 1/2 inches apart.
Bake for 8-10 mins.
Cool for 2 mins then eat with caution.
How did it turn out? Well.. I put too much Cardamon in it and I feel as if it needed more liquid. That's a nice way of saying it's kinda chalky. I've eaten three and In a few mins i'll probably have to go running to the restroom. It might be better if I put a huge dolop of Frosting on it or cooked it for 12 mins so it would be crunchy. If you do decide to try this at home, make sure you have a big glass of water or milk or soy milk or SOMETHING nearby.
I'll play with this recipe and when I find the perfect mixture I'll post it. But one thing is for sure: My sweet tooth has been satiated and after 3 cookies I am un interested in eating any more cookies. :D

Coconut flour, and erythritol. Coconut flour has no starch, and is therefore a million times more likely to help you lose weight than starchy gf mixes, and erythritol is much more natural than Splenda. Coconut flour is also crazy high in fiber.
